Since the start of March, I’ve been following a predominantly Paleo diet. In case you’re unfamiliar with the Paleo diet, it is essentially a “caveman” diet that pretty much only consists of vegetables, meat and fish. That’s right, no wheat, no sugar, no dairy, no grains and no legumes!

Although I actually quite enjoy following Paleo for the most part (I even did the 30-day challenge a few years ago), as you can imagine, it can become challenging when you’re looking for Paleo-friendly alternatives to popular meal accompaniments such as rice, for example.

Recently I made cauliflower rice for the first time and quickly fell in love with it. So much so that I’ve made it almost every week ever since! Once thing I discovered about cauliflower rice is that I love it even more when I add coconut to make a Paleo Coconut Cauliflower Rice recipe. If you love asian dishes and curries as much as I do, you will appreciate the fragrant sweetness that this version adds to the meal.

Since there’s not much of an exact recipe to follow. Here are the loose guidelines you need to make a super quick and easy Paleo side dish for your meals.

Paleo Coconut Cauliflower Rice Recipe 

What You Need:

1 medium cauliflower

half an onion (optional)

approx half cup of unsweetened coconut flakes

1-2 tbsps coconut oil

1-2 tbsps water

salt & pepper to taste

What To Do: Remove the stalks from the cauliflower and chop it into chunks. Throw all of the pieces into a food processor and pulse until the cauliflower resembles rice. Heat the coconut oil in a frying pan. If using onion, add the chopped onion to pan and sweat. Add in the cauliflower plus 1 or 2 tablespoons of water and lightly steam the cauliflower. Add salt and pepper to taste, and stir in the coconut flakes until fragrant. This really doesn’t take long so plan to have things cooking for no more than about 5 minutes.

Serve with your main of choice and enjoy!
