If April showers bring May flowers, I’d say June brings warm weather and World Pride Month. As a Torontonian, I’ve always been extremely proud of the fact that our city is home to one of the biggest and best Pride celebrations in the world. And isn’t it even more exciting that this year, we will, (finally) once again, have the support of our Mayor – and even our Prime Minister – at the big event!? I love that.

I also love when brands and companies take the time, effort and resources to support the celebration of Pride in a genuine way. It was a very quick ‘YES!’ when my friends at Absolut asked me if I would be interested in creating a cocktail recipe with their new Absolut Mix bottle that features the rainbow flag – an icon of diversity – and hits stores across Canada and at the LCBO this month for $26.95.

When I was thinking about the kind of cocktail I wanted to create for this recipe, I was most inspired by the beauty of this limited edition bottle, and everything it stands for. I thought it would be great to make a fresh summer cocktail recipe that incorporated a number of different fresh fruits that could replicate the colours of the rainbow flag.

So here is my fresh and fruity summer cocktail just in time for World Pride Month in June: The Pride Rainbow Cocktail. Find the recipe below!

The ‘Pride Rainbow’ Cocktail Recipe

(makes 1 drink)

What You Need:

12 raspberries

2 large square ice cube

2 ounces Absolut Vodka

Juice of half an orange

Juice of half a lime

2 round slices of pineapple

1/4 cup of water

Blueberries and slices of kiwi and orange to garnish.

 

What To Do:

In a tall cocktail glass, place the raspberries at the bottom and muddle them together. Top with the two large ice cubes and pour in the vodka, followed by the freshly squeezed orange juice and lime juice. Thinly slice the kiwi and gently stick them to the sides of the glass. Throw in a few whole blueberries to add a pop of blue. Blend the 2 slices of pineapple with the water in a high-powered blender or food processor until it’s a smooth and frothy mixture and pour into the glass to the top. Garnish the rim with a slice of orange, kiwi and a blueberry.
