Since it’s Father’s Day today, I wanted to share a fun, summery, recipe that would highlight one of (almost) every dad’s favourite drinks, Johnnie Walker Black Label. But why stick to the same old classics when you can create something new? With the idea of making some adult POPsicles on poppa’s day, I started poking around the internet for some inspiration.

Probably the most used app on my phone after Uber and the new Ritual app, is Epicurious. I’ve been addicted to this app for years because I find it particularly helpful for recipe inspiration while I’m on the go and far away from my cookbook collection at home. Also, you can literally type in the one thing you’ve got left in your fridge and you will quickly have tons of great recipes to choose from that will help you turn that lonely item into the star of your meal.

Naturally, I searched for some boozy popsicle ideas on Epicurious and found this great Blueberry Julep Recipe, as pictured above. Since I wanted to use up the fresh organic blueberries I had in the fridge, and the mint that’s been growing wild in my garden, I thought this recipe looked like it would be perfect. Of course with the small adjustment of switching bourbon to an equally yummy blended scotch whisky by Johnnie Walker Black Label.

Here’s how to make Blueberry Julep Popsicles with Johnnie Walker Black Label!

Ingredients:

1/2 cup superfine sugar

4 sprigs of mint

2 cups blueberries

6 tablespoons Johnnie Walker Black Label

Instructions:

Place the sugar and the mint in a small saucepan with 1 cup of water and slowly bring to a bowl. Let simmer for 5 minutes then remove from heat and allow to infuse for 30 minutes. Once cooled, put the blueberries and Johnnie Walker Black Label into a food processor or blender, and pour over the syrup with full mint sprigs included. Blitz until smooth. Pour into 6 popsicle molds and place in the freezer for 2 hours, then insert the popsicle sticks, and allow to freeze completely for another 4 hours.

Here’s what mine looked like once I got them out of the freezer. Quite similar to what Epicurious promised, minus the cuter molds and wooden sticks! But hey, I was short on time and I could only find one popsicle mold to choose from at my local Home Sense on the day that I went in. Besides, it’s all about the flavour anyway, isn’t it?
