Advance meal prep is one of the best things for helping you stay on track with your healthy meals during the week, but it’s no secret that it can be time-consuming and difficult to maintain. With our busy schedules, it can be really hard to find the time to cook or prepare meals in advance, which is why I love anything that help make this easier without sacrificing quality of food and its health benefits.
When I travelled to Glasgow last September, I visited the bookstore Waterstones and picked up the Get The Glow cookbook by popular UK fitness and health blogger, Madeleine Shaw. In her book, I found a recipe for something called ‘overnight bircher‘ that she raved about, and I recognised from the pages of a few of my other health-freak recipe books at home.
I was hesitant about trying this recipe at first because I’m not a huge fan of most oatmeal or cereal, but liked the idea of a mini one-pot breakfast that would be ready for you to grab-and-go in the mornings. Once I did finally try it, I quickly got hooked. This really is the easiest breakfast to make and it’s sooo tasty! I love that soaking the oats overnight gives them a softer texture, and that you can mix in and top your bircher with anything you like.
The overnight bircher recipe below is based on Madeleine’s, but with the addition of a few #GracieCooks tweaks. See below for how to make it!
Simple Overnight Bircher Recipe with Superfoods
What You Need:
1/2 cup organic rolled oats
1 cup organic almond milk
pinch of ground cinnamon
pinch of ground cardamon
pinch of sea salt
1 teaspoon of vanilla extract
Toppings:
maple syrup
pumpkin seeds
chia seeds
raw cacao
walnuts
fresh fruit (I like berries or pomegranates!)
What To Do:
The night before you want to enjoy your tasty overnight bircher, soak the oats with the almond milk, cinnamon, cardamon, salt and vanilla in a bowl. Personally, I like to mix this right in a jar or glass container with a lid so that I can reduce the amount of dishes created and eat it right out of the same jar or container the next day.
In the morning, grab the oats from the fridge and top with your favourite toppings! You can really play around with whatever you like, and have on hand, but I’ve listed some of my personal favourites above, which are delicious when served together too.
The overnight bircher mix will keep in the fridge for 1-2 days so feel free to make a couple!
