Last week I had the pleasure of attending a great dinner at Blowfish Resturant on King West in Toronto to celebrate their new addition, BarFish.

Over the past few years I’ve followed the work of Blowfish’s extremely talented head bartender, Nishan Nepulongoda, from media events to cocktail competitions. His work is truly on another level.

One of his latest concoctions to knock my socks off is the cocktail he created to greet guests at the dinner last week called The Cucumber Dream. Let me tell you, this gorgeous drink really is a dream.

What’s so exciting about the opening of BarFish (located within, and just off to the side, of the restaurant) is that now you can head to Blowfish specifically for their cocktails alone.

In case you don’t have the chance to head to BarFish and try one of Nishan’s creative cocktails in person, he’s kindly shared his recipe for The Cucumber Dream cocktail here for you to enjoy at home!

The Cucumber Dream ($12 at BarFish) recipe:

1.5 Bombay Sapphire gin

0.5 Calamansi juice

0.5 Aperol

2.0 Lime juice

1.0 Falernum syrup

1 dash lemon bitter

Muddle three slices of cucumber, double strain and garnish with cilantro
