When you lead a double life – and by that I mean handle two full time jobs (the 9-5 and blogging by night) – there comes a point when you just completely burn out. That’s how I felt anyway when I was bitching and moaning to fellow double lifer, Rema of The Burgundy Book, and expressed my desire for nothing more than a day of comfy PJs on the couch, accompanied by back-to-back J.Lo movies. Since she too shares my love for J.Lo movies, and yearned for a lazy day in, we decided to have a slumber party!

Okay, so we didn’t actually sleep over, and our schedules only allowed for a few hours of actual hang time, but we did have a slumber party-esque hangout that included a delicious treats and a bit of much-needed beauty pampering.

Obviously my greatest concern was what our menu would consist of so we headed out to the grocery store. Thanks to Metro’s new app, we were able to easily locate a Metro store right by Rema’s house, and checked the latest deals and their weekly menu on our way there. With so much selection — from the menu suggestions in the app to the abundance of items in the store — we were quickly overwhelmed by all of our options. In the end, we couldn’t deny our desire for a good ol’ pizza, but a fresh and homemade one of course.

Rema let me in on one of the best Metro secrets ever that day when she said, “You know Gracie, most people don’t know this but you can actually buy fresh pizza dough from the deli counter at Metro!” And so that’s what we did, and we scored the last ball of it too.

Here’s our recipe for an easy and delicious pizza made using ingredients you can find at your local Metro store. Be sure to add the ingredients to your shopping list in the My Metro app so you don’t forget anything on your next shopping trip! Gracie & Rema’s (Gourmet) Slumber Party Pizza:

What you’ll need:

1 fresh pizza dough from the Metro deli

1 jar of sundried tomato paste

1 container of bocconcini balls

1 pack of oyster mushrooms

1 container of mixed olives

1 jar of sundried tomatoes in seasoned oil

1 pre-cooked BBQ roast chicken

Arugula to top

Olive oil

Truffle oil

Sal & Pepper

Red chillies

Step 1: Pre-heat your oven to 400 degrees. Roll the dough onto a lightly greased (with the olive oil) pizza pan, and generously spread the sundried tomato paste over the pizza as you would with a regular red sauce.

Step 2: Tear apart the bocconcini and spread it around the pizza. Repeat the same step with the oyster mushrooms.

Step 3: Slice the sundried tomatoes in seasoned oil and scatter onto pizza. Pit the olives (you can do this easily by pressing the side of a knife down on the olives), chop and scatter as well.

Fun Fact: I’m the only Canadian that Rema (who is British) has ever met that loves olives! Madness!

Step 4: Pull off pieces from your BBQ chicken and add on to the pizza.

Step 5: Now your pizza should look something like this. Are you drooling yet? I am. If your oven is as hot as it can get, pop it in the oven for approximately 10-15 minutes, or more if it needs it.

Step 6: Once you pizza is ready (the crust should look nice and golden brown) remove it from the oven and immediately add a handful of arugula on top. Drizzle with truffle oil, season with salt, pepper and chillies.

Now dig in! We wouldn’t blame you if you ate the whole thing in one go.
